Jackson played college football at Coe College, a Division III school. He was named to five All-American teams in 2002, rushing for 1,702 yards and 29 touchdowns. Jackson was a two-time Iowa Intercollegiate Athletic Conference MVP for the Kohawks. He graduated in 2003 with a degree in sociology.
